Banana Passionfruit Loaf
With no sugar or butter this is a delicious way to make better choices.
Ingredients
- 2 overripe bananas (mashed)
- 2 eggs
- ½ cup greek yogurt
- ¼ cup coconut oil
- 1½ cups SR flour
- 170 g tin passionfruit pulp
- 1 tsp arrowroot powder
Instructions

Mix together everything down the flour. Add in ½ a cup of the passionfruit pulp. Mix together and pop in a loaf tin and bake at 160 deg cel until a skewer comes out clean. Combine the remaining pulp with the arrowroot and microwave until thick. Smear on top of still warm loaf.

If cut into 8 pieces, each piece is approximately 238 calories.
