Ingredients
  • 1 cup warm mashed potato (great for using left overs!)
  • ¾ cup sugar
  • 2 cups SR flour
  • 1 cup milk
  • 1 cup sultanas
  • 1 tsp cinnamon
  • 1 tsp vanilla
Instructions
  1. Bung everything in the mixer and beat for 2 minutes. Pop in a loaf tray (I made a double batch above) and bake at 180 deg cel for around 40-50 min.

The Ramblings:

This recipe came from my last boss, Wendy. I have tweaked it a little bit but the same concept. I’m appalling at estimating how much mashed potato to make so I always err on the side of more with this as my plan for left overs.
