These Carmel Fig Squares are basically my take on the American fig newtons.
Sweet, chewy, and packed with figgy goodness!
- 125 g butter
- 2 tbsp golden syrup
- 375 g chopped up dried figs (a little more or less won't matter, I just used a packet of them from Aldi)
- ½ cup sugar
- 2 tsp vanilla
- 1 egg
- 2 cups plain flour

Pop half of the butter, the syrup and figs in a saucepan over low heat. Let them simmer away until figs plump, soften and ever so slightly caramelise. Pop in the fridge to cool. Cream remaining butter and sugar well. Add eggs and vanilla then flour. Roll dough out quite thinly into a big rectangle. Smear cooled figs onto half. Fold the dough over and gently push down. Chop into rectangles (I get 16 most times), set on baking trays just apart and bake at 180 deg cel until tops just start to brown.

Not in the mood to ramble today. Some of you would have seen in the news that a 26 year old man died in a gyro crash near Yaraka yesterday. He was an awesome human, someone I thought quite highly of and a friend I never imagined would be lost so young. Hug your loved ones a little tighter and have a Bubble-O-Bill for Jack.
