Choc Orange Shortbread Biscuits

Method

Cream butter and sugar very thoroughly. Add custard powder, orange juice, zest and cocoa and beat well. Gradually add the flour. Divide dough in two and shape into logs on cling wrap. Wrap up and freeze for at least an hour. Slice log (I did about 1 cm thick but adjust to how you like them), arrange on tray and bake at 180 deg cel. I didn’t have any on hand today but you could definitely half dip them in melted chocolate. I just did a drizzle of some left over chocolate coconut oil icing I had in the fridge and sprinkled with some orange zest sugar.

I am a big believer in the Covenant of the Deep Freeze. ‘Thou who has diligently stocked thy freezer shall not face lunch box packing peril.’ Chop the Proverbial Sheep, 3:10.

These are a double whammy of freezer awesome because not only can you freeze them once cooked, you can definitely leave logs in there and just pull out and bake them on days when the wheels are falling off!

Ps, A very talented friend has crafted us our new logo (below) and it includes a gorgeous merino sheep with a tag reading ‘Chop’. My slightly off kilter sense of humour is thoroughly enjoying ‘Chop the Sheep’ taking on a life of her own, so brace yourself for the upcoming adventures of Chop. (I’m not crazy, my mother had me tested…..)
