Matt’s favourite, creamed rice pudding.
An oldie but a goodie!
- 1½ cups medium grain rice
- 2 L milk
- 1 tin condensed milk
- 3 tsp vanilla essence

In a very large saucepan simmer milk, rice and 500mL water, mixing often until rice is soft and mixture is the consistency of pouring custard (it will thicken considerably as it cools). This will take a fair while; patience is a virtue…. Remove from heat and mix through condensed milk and vanilla. Let cool then pop in fridge. It will form a skin on top but that's normal (and my favourite part!).
The Ramblings:
One of the many awesome things I discovered at my last job, was my love of creamed rice pudding! It was something Mum never made so boarding school was the first time I tried it. Once was more than enough… Then and there I dubbed it ‘Maggots in Milk’ and didn’t give it another crack until trying Wendy’s. It was love at first bite.
Matt is an avid rice pudding fan too but his favourite is the ‘Wicked Sista’s’ bought one. I will admit, it is jolly scrummy! The price tag, however, horrifies me when I get get everything to make it ‘free’ on stores. I’ve been playing with this recipe for nearly a year now, adjusting it to find our ‘favourite’, and yesterday Matt finally called it, this is the one!!!
I must admit, today however, I wear the mark of the glutton…. a cut in the webbing between my pointer and middle finger…. A mark only seen on one who has been running their finger around the inside of the condensed milk tin…..
Matt’s sympathy toward flesh wound was expressed through laughter and shouts of “Karma!!!!”…. His compassion is touching…. And he wonders why I’m unsympathetic……
Maggie Mayhem…
I’m sitting out on my verandah, typing these ramblings, cup of tea in hand and my giant puppa dog racing laps around the house… Peaceful….. In her chaos, Maggs jumped up for a quick cuddle on her way past but managed to bump the play button on my laptop…. Ballet music really must powerful stuff, it even caused the dog to fly sky high! Poor little possum hid her head behind my back for about 10 minutes, sooking at the surprise. If cats could laugh I think Howa’s pants would be wet about now!
