- 1½ cups dried fruit of choice (today I used chopped dates because I was out of sultanas)
- 1 cup boiling water
- 1 tbsp instant coffee (or could use a tea bag if you aren't a coffee lover)
- milk
- 2 tbsp instant dried yeast
- ⅓ cup sugar
- 5-5½ cups bread mix (or could use plain flour in a pinch)
- 1 tbsp cinnamon
- 2 eggs
- 60 g butter (melted)

Mix up fruit, boiling water and coffee and set aside to soak for half an hour to an hour. Drain liquid into a measuring jug and top with milk so combined liquid makes 1½ cups. Heat in microwave until luke warm. Add sugar and yeast and set aside until frothy. Combine everything, including fruit, and beat with dough hook for 10 min. It should be sticky but be forming a nice ball. Set aside in a warm place until doubled in size. Punch down and knead a little on a floured surface. Shape and pop into a loaf tin. Set aside to rise again for 20 min. Pop in oven at 180 deg cel until cooked through (should sound hollow when tapped). Enjoy!

This morning was spent on the phone to Australia Post…. Nearly 2 hours on hold made finally getting to hoe into my fruit toast loaf even sweeter… Apparently everyone is online shopping atm, and my next lot of boxes books that were meant to be here Friday, have been sitting in Rockhampton, not moving for the last 5 days…. Grrrrrrr…..
Anywho, yesterday was a fun day. I went to the doctors and got to hear Miss Hazel’s heart beat! It took a while to get it consistently though as she was in a playful mood and kept kicking the dopler… Very cute!
