This is my basic fudge recipe that I adjust to make absolutely any flavour you can imagine. It is a soft, creamy fudge, that doesn’t need a (bloody, stinky, awful, jack ass) candy thermometer and knocks together fairly quickly; no dicking around. Underneath I will pop up some ideas for how to adjust for different flavours.
The basic formular for awesome fudge
- 1 tin condensed milk
- 125 g butter
- 2 tbsp glucose syrup
- 1 cup sugar
- 200(ish) g chocolate

Grease a square cake tin. Chuck condensed milk, butter, syrup and sugar in a saucepan (a non stick one makes life much more pleasant…) and combine over low heat, stirring constantly until mixture is glossy and sugar has dissolved. Keep stirring and bring to the boil until it thickens and starts to pull away from the sides. Remove from heat, stir in chocolate and additives, pour into tin and bung into the fridge. Cut with a hot knife.
Variation Ideas:
Caramel = use brown sugar and white chocolate. Can sprinkle salt on top for salted caramel.
Cookies & Cream = white sugar, white chocolate and add crushed oreos at the end,
Rum & Raisin = brown sugar, dark chocolate and add in raisins that have been soaking in rum for at least 24 hours.
Chocolate = choice of white or brown sugar, dark or milk chocolate but get creative with what you press into the top. Today I did brown sugar, milk choc and pushed in half a packet of crushed tim tams, other times have used violet crumbles, mnm’s, you name it!
Berry = white sugar, white chocolate and either mix through or swirl in top choice of berry jam.
Other ideas that I can’t remember exacto what I did, but wing it as to how you like it…. Coffee, musk sticks, marshmallow, lemon extract with toasted shredded coconut, vanilla essence and sprinkles for ‘cupcake’ ones, etc etc etc. Sky is the limit, really put your thinking hat on and let your creative juices flow!
The Ramblings:
Back in what feels like a different lifetime, I was right into relay for life and my go-to fundraiser was fudge! A million different variations and tweakings were made until this base became just right. It’s not often that I reminisce fondly about that former life but relay for life was something I truly loved. The Toowoomba committee were such awesome people who’s dedication was so inspiring and they truly created something incredible every year. One day, when it’s all a little less chaotic, I so hope I can get one going out here!
