Iced Coffee Cupcakes

Fluffy, caffeinated heaven

Servings: 18 patty cakes
Ingredients
  • 125 g butter soft
  • 3/4 cup sugar
  • 1/2 cup milk
  • 1 1/3 cups SR Flour
  • 1 tsp vanilla
  • 3 tbsp custard powder
  • 2 tbsp instant coffee (or ditch coffee and water and use essence or cold press coffee)
  • 1 tbsp boiling water
Instructions
  1. Mix together coffee and water. Add everything else and beat for a few minutes until light and fluffy. Spoon into patty pans and bake until a skewer comes out clean. If you like, top with coffee buttercream.

It turns out Miss Maggie is a howler…. After a second walk today and running her ragged this afternoon, she’s conked out tonight (thank goodness!), but after her exploring her vocal chords last night, today was a caffeine in my cake kind of day…
