Iced Coffee Cupcakes
Fluffy, caffeinated heaven
Servings: 18 patty cakes
Ingredients
- 125 g butter soft
- 3/4 cup sugar
- 1/2 cup milk
- 1 1/3 cups SR Flour
- 1 tsp vanilla
- 3 tbsp custard powder
- 2 tbsp instant coffee (or ditch coffee and water and use essence or cold press coffee)
- 1 tbsp boiling water
Instructions

Mix together coffee and water. Add everything else and beat for a few minutes until light and fluffy. Spoon into patty pans and bake until a skewer comes out clean. If you like, top with coffee buttercream.
