Name: Iced Coffee Cupcakes
Ingredients: 125 g butter (soft); 3/4 cup sugar; 1/2 cup milk; 1 1/3 cups SR Flour; 1 tsp vanilla; 3 tbsp custard powder; 2 tbsp instant coffee ((or ditch coffee and water and use essence or cold press coffee)); 1 tbsp boiling water

Fluffy, caffeinated heaven

Servings: 18 patty cakes

Ingredients

125 g butter soft
3/4 cup sugar
1/2 cup milk
1 1/3 cups SR Flour
1 tsp vanilla
3 tbsp custard powder
2 tbsp instant coffee (or ditch coffee and water and use essence or cold press coffee)
1 tbsp boiling water

Instructions

Mix together coffee and water. Add everything else and beat for a few minutes until light and fluffy. Spoon into patty pans and bake until a skewer comes out clean. If you like, top with coffee buttercream.
