Passionfruit Bars

A rich, chewy base beautifully contrasted with a fresh passion fruit buttercream.

Servings: 16 bars
Ingredients
Base
  • 185 g butter (soft)
  • 1 cup sugar
  • 1 tin condensed milk
  • 1 egg
  • 1/2 cup coconut
  • 1 1/4 cups plain flour
Icing
  • 2 passionfruit
  • 60 g butter (soft)
  • Icing sugar
Instructions
  1. Pop everything for the base in the mixer for a few minutes until nicely combined. Pour into a greased slice tin and bake at 150 deg cel until centre is firm. Let slice cool before icing. To make icing, mix passionfruit and butter with enough icing sugar to make a soft buttercream.

This weekend was the Outback Food, Wine & Music Festival in Longreach. I was in heaven! Heavenly cheeseboards with my favourites, fresh figs, stunning seafood, smokey beef ribs, cheesecake and matcha macarons. Aka Claire heaven! Topped off by catching up with a friend I haven’t seen for far too long, such a good night.
