A fresh and scrummy side dish
- 1 big handful fresh basil leaves
- 2 tsp minced garlic
- ⅓ cup toasted cashews (or ¼ cup toasted pinenuts)
- ⅓ cup olive oil
- ¼ cup parmesan
- ½ cup mayonnaise
- 1 tsp lemon juice
- 500 g spiral pasta

Pop your pasta on to cook. Zoom up everything else in your favourite zoomy device (mine is my Aldi nutribullet knock off, that thing is a trouper!). Once pasta is cooked, drain and mix pesto through hot pasta.
To tizzy it up I top with shallots. I ran out today but if I had them I would have added halved cherry tomatoes or semi dried tomatoes. Ps, if you are using semi dried tomatoes, use their seasoned oil in place of the olive oil! Perfecto!
The Ramblings:
Borris the Basil plant got fertiliser the other day (noteworthy as he usually thrives on neglect…), and has gone bat shhhhh crazy. I gave him quite a shearing so naturally today was pesto pasta salad day!
In an effort to not let myself get complacent, I’ve started on the next book, the dinners edition! So hopefully it will be out in November… fingers crossed…. and assuming Hazel doesn’t come out a screamer…… But particularly before she arrives I’m making a concerted effort to actually write down recipes for my dinner creations….
