Pina Colada Cookies

Fresh, light biscuits that are perfect for summer smokos

Ingredients
Cookies
  • 125 g butter (soft)
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp coconut essence
  • 1 capful rum (or 1 tsp rum essence)
  • 2 cups plain flour
  • 1 tsp baking powder
  • 1/2 cup coconut
  • 1 tin crushed pineapple (well drained, 1/2 tbsp juice reserved for icing)
Icing
  • 1 tbsp butter
  • 1/2 tbsp pinapple tin juice
  • icing sugar
Instructions
  1. Cream butter and sugar. Add eggs and essence/s and rum. Add everything else and beat well. Pop tsps of mix on trays and bake at 180 deg cel until bottoms are just starting to brown. Mix icing butter and juice together with enough icing sugar to make a stiff buttercream. Fill and sandwich cooled biscuits.

The Ramblings:

Matt is well and truly in the good books after he brought home another baby for me yesterday so now I have 3 wooly friends!!! I’m a big believer in being able to laugh at myself but if you suffer from LBL, sit on the loo to read about feeding them last night….

So a normal person would probably feed animals on dusk but for me that’s crunch time for dinner and Miss Mags looses her *stuff* if she’s locked in bed while it’s still light so I normally do them after dropping tea down. Last night didn’t exactly go to plan though and I ended up feeding the menagerie just before bed around 9:30.

Now Maggie get 2 eggs with her biccies for dinner (I buy them separately, I promise I don’t use stores eggs Liz!) . So as per usual I chucked her eggs in my shorts pockets as I made the lambie milk. Being still quite young and training a work in progress, Miss Muppet was a bit excited about dinner time and jumped up on me as I came out the door, smooshing an egg…. So in my dog-tired, infinite wisdom I decided, stuff it, it’s dark, I’ll just ditch my egg soaked duds and jox, I’ll only be a second…

All was going well until in doing so I knocked the lamb bottle off the edge of the veranda and it tumbled under the house. I ducked downstairs but as I bent over to retrieve the bottle, the ever affectionate Mags decided to let me know she was there to help and pushed her way between my legs to see what I was doing. Of course I jumped out of my skin, thumping my head on the veranda rail and scaring the bejeezus out of Howa the cat, who’s meowing incited some cat tail chomping from the puppy, much to Howa’s expressed dismay….

With heartrate settled slightly, new eggs, lamb bottle, puppy finally caught and underarm (with her new boundary collar she has to be carried out the gate) we set off (nothing else can go wrong right?).

My two older poddies know the drill well and aside from the usual ‘stacks on, it’s my turn’ business, they drank without issue. My new little poppet didn’t drink amazingly at lunch but I did get some into him and was hopeful he (like most do) would pick it up again fairly quickly by dinner… He is a bit older though and has been a ‘snicker’ for a while so his flight instinct is rather pronounced. It turns out, a half naked, lady with an over excitable, very large puppy, waving around a cordial bottle of milk is apparently a little confronting for a scare bear lambie… So I scaled the fence and when ‘softly-softty’ and sneaking up on him didn’t work, a foot persuit commenced… Reveling in my victory, without hessitation, I scooped him up…

Suffice to say, there are no winners when one is pantless and trying to detain a very, very, very, heavily burr covered wriggly fluff ball…..

Note to self: When the egg breaks, take the 5 extra seconds to go back inside and put clean pants on, you’ll spend far longer picking out the prickles…..
