Quinoa Lunch Box Bites

Easy, delicious and nutritious!

Ingredients
  • 6 eggs
  • 1 cup cooked quinoa (or you could use rice in a pinch)
  • ½ cup SR flour
  • cups grated cheese
  • 1 small zucchini (grated)
  • 1 carrot (grated)
  • 1 tsp garlic
  • 1 tsp paprika
  • 2 tsp mixed herbs
  • 1 cup finely chopped cold meat (today I used roast chicken)
  • a good dose of salt and pepper
Instructions
  1. Mix everything together. Now you have choices. Personally I love these cooked in the sausage roll maker (super easy for toddler hands) but they are also awesome in friand or muffin tins or could be great cooked in a slice tray or pie dish. Basically whatever you want. Cook or bake until fully firm and lightly browned. Incredible served with Japanese Mayo or sweet chilli and toasted sesame seeds!

The Ramblings

I have been accused of fattening up my partner (yeah I just snuck that in there, there is a super lovely beau who threw his hat in the ring and has been on the scene for a little bit)…. Anyway, that means his days of chocolate cake on the tractor are officially over, replaced with all things made from quinoa and chia seeds!!! hehehehehehehehehehe!!!!
