Ingredients:
- 1kg ish mutton chops
- 1 1/2 cups red wine
- 2 tbsp brown sugar
- 2 tbsp worcestershire sauce
- 2 tsp garlic
- 2 tsp rosemary
- 2 tbsp flour/ cornflour (I used flour tonight but cornflour makes it look a bit prettier)
- salt and pepper
Method:
Mix up all the sauce stuff and pour over the chops. Bake covered for an hour and a half. Pull chops out and keep baking them uncovered for another half an hour. While they are still baking, pop all the juicy goodness from the pan into a saucepan and simmer to thicken to make gravy.
The Ramblings:
I’ve always been a big fan of white wine but am gradually discovering reds. Normally I’m a big believer that if it isn’t worth drinking, it isn’t worth cooking with but this recipe is pretty forgiving, so drink the good stuff while this is in the oven!
