Chicken and broccoli pesto pasta
- 1 big handful fresh basil
- 1 cup toasted cashews (or 1/2 cup pine nuts)
- 1 tsp garlic
- 300 mL cream
- 300 mL sour cream
- 1 head broccoli (chopped into small florettes)
- 1 onion (chopped)
- 500 g chicken thighs (finely chopped)
- 250 g spaghetti

Zoom up the basil, nuts, garlic, cream and sour cream with a whizzy stick and pop it back in the fridge. Stirfry the broccoli and onion then chicken. Cook the pasta. Add everything back in the pan and turn off heat but continue stirring until sauce is hot. Top to taste with parmesan.
The Ramblings:
I (naively) never put much stock in the whole ‘cravings’ business but it’s truly baffling me, how a tiny dinosaur in my tummy can demand party pies and pasta… So in an effort to appease spewasaurus, lunch was party pies and tonight was Shrek Pasta time!
There is something in the water here apparently, Matt’s kelpie Daisy had 7 puppies that are about a week and a half old!!!! There is one particular little cutie who’s tail is a touch shorter than all the others and I have named him Stumpy. Just in case I needed any more helping being a psycho clucky lady…
