Sweet Potato Biscuits

Sweet Potato Biscuits

Not too sweet cookies with lovely spice flavor

Ingredients
Biscuits
  • 1 sweet potato (roasted)
  • 125 g butter (soft)
  • 1/2 cup brown sugar
  • 2 tsp vanilla
  • 2 eggs
  • 2 cups plain flour
  • 1 tsp baking powder
  • 1 tbsp cinnamon
  • 1 tbsp mixed spice
  • 1 1/2 cups sultanas
Icing
  • 1 cup icing sugar
  • 1 tbsp maple syrup
  • 1 tsp cinnamon
  • water
Instructions
  1. Bung sweet potato, butter and sugar in mixer and beat very thoroughly. Add eggs and vanilla then everything else, sultanas last. Pop spoonfuls on trays and bake at 180 deg cel until the bottoms just start to brown. Mix up icing ingredients with just enough water to make a thin icing. drizzle over.

Anywho, it was a rough day to be Miss Maggie yesterday. The poor little possum got her new zappy boundary collar (sounds cruel but it is much less cruel than her being reversed over…) and she had a bath! She seems to have forgiven me though, thankfully, and is quite snuggly this morning (which is much less smelly now!).

We have people coming to inspect our house this week so I’ve been madly trying to make my poor sad garden to look loved. This morning was de-grassing, planting my new little pretties and mulching. It was quite a circus with the ‘sooking from being zapped puppy’ square between my feet the entire time and a cat sitting on the veranda in front of my face, pushing his head through the rails to rub his face on mine while I was bum up digging….
