Got to love a good fake-away!
- 2 onions
- 1 capsicum
- 2 big carrots
- 1 tbsp garlic
- 1 x 425g tin pineapple (pieces works best but crushed is okay too)
- 1 tbsp soy sauce
- 1 tbsp sugar
- ½ cup chicken stock
- 1 tbsp cornflour
- 1 tbsp tomato sauce
- ¼ cup vinegar

Fry up vegetables and garlic in a drizzle of olive oil until carrot is tender. Put drained pinapple in and continue frying for a minute or two. Mix up everything else (including pinapple juice) and pour in over veg mix and cook until thickened. Pour over choice of meat.
So in terms of what to put this on, you can do basically anything. Tonight Matt and I put it over deep fried approx half a kg of cubed left over roast mutton. To make the batter I mixed up 2.5 cups SR flour, 2tbsp garlic steak seasoning, 2 eggs and enough milk to mix up a nice thick batter. Mum used to make this with left over bbq chook too.
This sweet & sour sauce is my new absolute favourite thing to do with left over roast meat!!!! Stuff roast curry!!!
