Whole Orange Custard Cake

Ingredients:

Method:

Thoroughly blend the whole orange (yes! WHOLE orange!) with a cup of water until very smooth. Heat in saucepan with custard powder, whisking until very thick. Set aside to cool a little.

Put everything else in electric mixer and beat on high speed for 5 minutes until light in colour and fluffy. Turn the mixer down to as slow as it can go and add the orange custard. Pour into cake tin and bake at 180 deg cel.

The Ramblings:

I know the whole orange sounds strange and the batter has a bitter after taste, but have faith, the finished product is divine!

PS, make sure your water isn’t hot going in the blender….. I found out the hard way……
