The perfect melting moments for winter
- 250 g butter (soft)
- 1 cup icing sugar
- zest of an orange
- ¼ cup orange juice
- ¾ cup corn flour
- 2 cups plain flour
Cream butter and icing sugar. Add the juice and zest and keep beating for a few minutes while you mix together in a separate bowl you corn and plain flours. While still beating, slowly add flour mix. Roll into balls and place trays in freezer for 15 min. Bake at 160 deg celfor 15-20 min until underside just starts to brown. Cool biscuits then make up some butter cream icing with the rest of the juice of the orange and either top with that or sandwich biscuits together with it. Ps, if you are sandwiching make a stiffer icing if topping a runnier works best. I don't usually bother but if you want to make them a little bit fancy, mix together some sugar and more zest, sit in a warm oven to try a little, then sprinkle a touch on top of each biccie.
The Ramblings:
I saw something along these lines using lemons the other day (dodgy as anything recipe online, some not in english??). I have beautiful fresh oranges and a freezer that is in need of some more biccies (for the boys lunches), so naturally, taaadaaa!
Until recently I have always read recipes that call for chilling time and either skipped that step or veto-ed the recipe. However, in an effort to explore this concept they call ‘patience’ (apparently its a virtue….) and now I’m taking pictures of my creations, chilling time has become a thing.
Given my less-than-saintliness though, 15 min in the freezer is a much patience as I can muster…. It is just long enough to hang out washing, turn on my sprinklers, pace a few laps around the kitchen, mutter “stuff it” and stick them in the oven.
