A decadent way to use up egg whites!
- 125 g butter (soft)
- ½ cup brown sugar
- 1 tsp vanilla
- 1 egg
- 1 tbsp cocoa
- 1½ cups plain flour
- 1 tsp baking powder
- 2-3 tbsp nutella
- 3-4 egg whites
- ½ cup white sugar
- 2 cups shredded coconut
Cream butter and brown sugar. Add egg and vanilla, then cocoa, flour and baking powder. Push into the bottom of a slice tin or large square cake tin. Heads up, unlike a 'normal' slice base, this one is basically cookie dough so don't try and smear it out with a bottom of a spoon, it will be a right pain, get your hands in there and you'll have it sorted in a jiffy. Smear the nutella evenly over the base. Rinse out your base bowl and use the mixer to beat the bajeesus out of the egg whites. Once they are soft peaks, add the sugar and beat until stiff peaks form. Fold through the coconut and spread on top of slice. Bake at 180 deg cel until the top is nicely browned and the meringue feels firm-ish in the middle.
I use this recipe to use up leftover egg whites. Today I used 4 but it wouldn’t make a great deal of difference if you only used 3, certainly don’t bother separating another egg specially! If you are only using 3 or they are smaller eggs, maybe consider easing back on the coconut a bit.
The Ramblings
One of my pet peeves is left over egg whites going to waste! Yesterday my brother, sister-in-law and niece came over to Mum’s house for brunch. I went a bit overboard and made mountains of food, including my hollandaise sauce for eggs benedict. As much as I adore hollandaise, I rarely make it because of the whole left over egg whites business. Enter, nutella meringue slice!!!! Problem solvered!!!!
For those who have been following along and know I have gestational diabetes, fret not I didn’t eat this decadent goodness! My Mum has the most awesome boss and long story short this slice is for his kiddo’s lunch boxes. Now when I say awesome, I mean like, gave Mum his ute to take me West at the start of my big adventure because our little corolla’s wouldn’t have made it up the road and I didn’t have my rav yet, kind of awesome. Also he and his wife have had a big clean out of their baby gear and have given Matt and I so so much stuff that has saved us thousands of dollars. Just really awesome humans. The least I can do is make them some nutella meringue slice!
Anywho, on a completely different topic but following the synapse of awesome humans…. I know social media has its pitfalls but I am also often surprised by the many lovely, random, connections it can generate! So I’m part of a few ‘blogger groups’ which have been invaluable for helping this techno gumby figure out the ins and outs of creating and running a website. So many clever people on there who so generously help out newbies! Quite a while ago one particular ladies kindness really stuck out. We got chatting and in true small world form, discovered a mutual friend! Anywho, I started following her food blog on facebook and after seeing her incredible looking coconut biscuits pop up this morning I remembered that I have been meaning to share her link on here for ages!
