Something a bit different than bangers and mash!
- 1 kg pork sausages
- 6 rashers bacon (chopped)
- 1 onion
- 400 g tin of kidney beans (drained and rinsed)
- 2 tbsp worcestershire
- 2 tbsp brown sugar
- 1 tbsp apple cider vinegar
- 1 tbsp honey
- 1 tsp all spice
- 1 tsp ginger
- 3 tbsp tomato sauce
- 4 tomatoes (chopped)
- 3 cups chopped hard vegetables
Poach sausages, drain and chop. With a bit of oil or butter, fry up the onion, bacon and sausage pieces in a big casserole pot until nicely browned. Add in beans, worcestershire, sugar, vinegar, honey, all spice and ginger. Continue frying for a few minutes until starting to caramelise a touch. Add in everything else and reduce heat. The veg will drop their waters, mix well and pop lid on to bubble gently until veggies are cooked. Depending on what veg you've used, you might want to add a tiny touch of water so it doesn't stick.
When I made this the other day I was quite limited in the vegetable department as my big brother has ‘decerning tastes’, aka is a fuss pot extraordinaire… I just used heaps of carrot, however normally I would use a combination of whatever was in the fridge/ cupboard, including potato, sweet potato, cauliflower, etc.
The Ramblings:
Not much to ramble about today, just trying to focus on being grateful for this time with my family and not dwell on missing home. Getting to spend time with my gorgeous little 1 yr old niece is definitely a highlight! Also loving being able to cook for Mum and feed my big brother (Doug) and his fam. This saucy sausage and bean casserole went to Dougo the other night when they came home from a few days away.

Seriously though, this takes ‘get some pork on your fork’ to a WHOLE new level! Even his just normal sausages are so so so darned good!!!
