Ingredients:
- 1 onion
- 250g bacon
- 2 big tsp minced garlic
- 2 tbsp Worcestershire sauce
- 800g ish tin crushed tomatoes
- 2 big carrots
- 2 zuchinis
- 1/4 head cauliflower
- 2 tsp dried basil
- 2 tsp mixed herbs
- 1 tbsp tomato paste
- 1 big tsp chicken stock powder
- 1 tin evaporated milk
Method:
Fry off roughly chopped bacon, onion, garlic and worcestershire until onion is soft. Add tomatoes, and refill tin with water, mix stock into it the pour over. Add everything else except evaporated milk. Simmer until carrot is very soft. Zoom up with stick whizzer. Add evaporated milk and heat through. It is beautiful as is but to make it look a bit more schmick, top it with some grated parmesan.

We are all fighting off colds here at the moment so mountains of veggies hidden in comfort food is the go. My dearest darling is a loudly proclaimed ‘soup hater’ but turns out he LOVES my pasta sauce….. (I just add a handful of cooked pasta, hehehehehe!)
