Ingredients:
- 1 onion
- 2 tomatoes
- 250g bacon
- 1 zucchini
- 2 tsp garlic
- salt and pepper
- 4 sausages (cooked and chopped up into little bittsies)
- 5 eggs
- 4 slices cheese
- 4 sheets puff pastry
Method:
Fry up onion, tomatoes, bacon, zucchini, garlic, salt and pepper until most of the juice is evaporated off. Keep a close eye as it likes to be naughty and stick to the bottom. Set aside to cool a little.
Line a dessert bowl with glad wrap. Then lay a sheet of puff pastry in it. Crack an egg in then cover with the zucchini fry. Lay sausage bits on the cover with cheese slice. Fold the pastry edges in and seal the bottom as neatly as possible. Tip parcel out onto a baking tray. Lightly beat an egg and use a pastry brush to douse the parcel. Repeat for next 3 and bake at 220 deg cel.
The Ramblings:
My boys are off to a different property where we have sheep on agistment next week so I have to send them with mountains of frozen food. So I thought I’d make these for some yummy brekkies.
My dearest darling is quite the fuss pot so I’m a bit limited in what I could put in these, you could add anything though! When I’m next down visiting Mum I will be making these with mushrooms, capsicum and spinach then topping it with hollandaise.
