Wendy’s Best Ever Slice

Ingredients:

  • 185g butter (melted)
  • 1 tin condensed milk
  • 1/2 cup brown sugar
  • 1/2 cup coconut
  • 1 cup SR flour
  • 2 tbsp cocoa (I’d forgotten to grab mine from the quarters this morning so used milo, works a treat too!)
  • 1 good tsp vanilla

Method:

Mix everything together. Bake at 180 deg cel for 20 min. Fret not it will fall down as it’s cooling and have higher edges, this makes it so fantastic for a take plate as you fill it up with choc icing (or for fancier things, gnache) and it travels really well.

The Ramblings:

I get asked fairly often where I learnt to cook… I find this tricky to answer as it’s a culmination of a lot. I grew up sitting on the bench helping Mum which obviously was a wonderful kick start. Since then though, I have been lucky enough to know some truly amazing cooks, some who have taught me how to be more ‘casual’ and get creative, others who’ve shared stunning family recipes and Wendy (my last boss) who without fuss creates the most scrumptious meals and baking from ‘pantry staples’ without the need of ‘town luxuries’. This is where this slice comes from. It is my go to for ‘bring a plate’ because it only uses things I already have in my pantry, and holy dooly it is stunning! I would be a millionaire if I had a dollar for every time I have been asked for this recipe. It seems simple, but trust me, magic!

In a true ‘ode to Wendy’, to take the photo with a bite missing, it would have been wasteful not to eat that piece for breakfast…. “Being an adult means no-one can stop me from eating chocolate cake for breakfast!” -Wendy-
