The ultimate birthday cake.
- 1 tin condensed milk
- ½ cup brown sugar
- 250 g chocolate
- 3 eggs
- 2 tsp vanilla
- ½ cup greek yogurt
- 1 pinch salt
- 1 ½ cups SR Flour
- ½ cup cocoa
- ½ cup almond meal
Stir condensed milk, chocolate and brown sugar over low heat to melt chocolate. Set aside to cool slightly. Whisk together eggs, vanilla, salt and yogurt. While whisking, add this mixture to the chocolate mix. Fold in all other ingredients and bake in a slow oven (it will take a while!). Once cooked, turn off oven and allow to cool completely in the oven to avoid a crater in the middle. To be proper flash, dust with icing sugar and top with fresh berries.
My Ramblings:
This cake was created as a birthday cake for a very special lady. With health a high priority for her, taste-wise these calories really had to be worth it, hence the decadence.
If you wanted to be truly devilish, topping it with ganache would be phenomenal!
My picture looks a little on the sad side as it had to travel the next morning so I topped it with berries on arrival but was too excited to eat it and forgot to take a nice photo!
