Not too naughty comfort food
- 125 g butter (melted)
- ½ cup greek yogurt (or sour cream)
- ⅓ cup brown sugar
- 2 eggs
- 1 tsp vanilla
- 1½ tbsp cinnamon
- 2 cups SR flour (I used wholemeal)
- 1 tsp baking powder
- 2 apples (grated)
Mix up butter, yogurt, sugar, eggs and vanilla. Mix in everything else. Divide amongst 12 patty pans. Bake at 180 deg cel until a skewer comes out clean.
I’m trying to find ways to still be able to have a few little yummies without blowing my blood sugar out of the water… I’ve done piles of research on GI and eating proteins with carbs etc etc etc… So this morning, these apple and cinnamon muffins are my attempt to pull all that info together. Fingers crossed this all pays off…
The Ramblings:
Yesterday was the best day I’ve had in a long time. One of my favourite humans made an 8 hour round trip to come visit me for the day!!! She even brought me flowers!!! And she also brought earbuds!!! Sounds little I know, but Barcy IGA has been out for a few weeks now and we were down to our last few…… So now we have squeaky clean ears, a brightened up kitchen and a much happier outlook.
