Bacon & Broccoli Rice Cups
Lunch box legends!
Ingredients
- 1 cup rice (uncooked)
- 1 tsp chicken stock powder
- 250 g bacon (finely chopped)
- 1 onion (finely chopped)
- 2 tsp minced garlic
- 2 zucchinis (grated)
- 1/2 head broccoli (super finely chopped)
- 2 cups grated cheese
- 3 eggs (lightly beaten)
Instructions

Cook rice with chicken stock in water. Drain really well. Fry up bacon, onion and garlic. Put everything in a bowl and mix well. Fill up well greased muffin tins with mixture and bake at 180 deg cel until outsides are browned.

I’m so excited about starting my new job next week and I have gone burko with freezer prep. These are one of my favorites and I’ve been making a mountain of them for not only the blokes but for me to take to town too. When I’m in town next I’m going to grab some brown rice to make some ‘Claire’s jeans fitting’ friendly ones!
