Living in the middle of nowhere has the downside of no shops that sell bagels…. Problem solved!
- 3 tsp dry yeast
- 2 tbsp sugar
- 1 1/4 cups warm water
- 3 1/2 cups bread mix

Mix water with sugar and yeast and let proof. Start with 3 cups of bread mix and knead thoroughly, adding in extra until no longer sticky. Continue kneading until it feels silky smooth and rebounds when lightly poked. Cover with damp cloth and let rise until doubled in size. Preheat oven to 200 deg cel and bring a large pot of water to the boil. Divide dough into 8 pieces and shape. Boil on each side for 1-2 min. Bake utnil just golden.
The Ramblings
The time frames for rising yeast vary greatly depending on environment. Don’t get too hung up on time frames. I know a lot of people get a bit of tense about yeast but fret not, it isn’t rocket science. In cold weather it will take a loooooooong time. If you need to, preheat the oven then turn it off to use as your warm place.
