Is anything more perfect with a morning cuppa than banana bread?
Banana Bread
Simple, delicious and beautifully moist!
Ingredients
- 4 large bananas (overripe works best)
- 60 g butter
- ¾ cup brown sugar
- 2 tsp vanilla
- 3 eggs
- 2 tsp cinnamon
- 2 cups self raising flour
- ¾ cup coconut
Instructions
Cream together bananas, butter and sugar. Add in eggs and vanilla then everything else. Pour into a large loaf tin (or two little ones) and bake at 180 deg cel until a skewer comes out clean.

Hope you all have had a very happy Christmas and a lovely start to the new year! It has been a rather quiet affair here, with not a lot of fuss made for either occasion. Sometimes though, quiet time at home is just heavenly!
Anyway, not much to ramble about today, (I am a shocker at keeping secrets) but when I come back from Tassie and get back into the blogging business, I can’t wait to spill the beans!!!
