Ingredients:
- 1 kg diced chuck steak
- 4=6 tomatoes (depending on how big they are)
- 1 tin crushed pineapple
- 1 good handful fresh basil
- a few sprigs dill
- 1 onion
- 1 tbsp all purpose seasoning
- 2 zucchinis (or one gigantic home grown one today!)
- 2 tbsp tomato paste
- cornflour
- 500g spaghetti
Method:
Cover the bottom of a lidded casserole dish with chopped tomatoes, then meat, pineapple, onion, herbs and finally seasoning. Bake at 180 deg cel covered for 2-3 hours. Mix through zucchini and bake for half an hour. Take out and mix through tomato paste and cornflour then stick back in the oven uncovered for another 20 min or so until thickened up nicely. Boil up the spaghetti, top with pasta and serve. If you are feeling proper flash like I was tonight, stick in a sprig of parsley and/ or top with parmesan.
The Ramblings:
Not much to tell today so I shan’t ramble unnecessarily. Bill is still adorable and not looking like so much of a skeleton, Maggie my new puppy arrives on the weekend, life is good. Made better with pasta!
