Ingredients:
- 2 cups frozen blueberries
- 2 apples (chopped up really little)
- 2 tbsp butter or coconut oil
- 1/2 cup sugar
- 1 tsp bicarb soda
- 1 cup plain flour
- 1 cup rolled oats
- 2 tsp cinnamon
- 1 egg
- 1/3 cup desiccated coconut
Method:
In a big saucepan bring 1 cup of the blueberries, apples, butter and sugar to a rolling boil. Remove from heat and add bicarb. Don’t be put off by the colour of the bubbles….. Let it cool and settle a little (only a few min) then mix in the flour, oats, cinnamon and egg. Spread into a square cake tin (or a slice tray). Sprinkle over remaining blueberries then coconut. Bake at 180 deg cel until cooked through in the middle. If you’d like, top with a drizzle of lemon glaze.

This slice is a little different looking I know, but like books, don’t judge until you’ve tried it! I like that while it is still a bit naughty, it doesn’t have that much butter or sugar (and you could probably skimp a bit on the sugar) it still taste devilishly good!
