Ingredients
- 1 1/2 cups milk
- 1 big tbsp vinegar
- 2 eggs
- 1/4 cup white sugar
- 1 tsp baking powder
- SR flour
Method:
Mix milk and vinegar and let sit for 10 min. Whisk in eggs then sugar. Add baking powder and 1 cup of flour then add more flour as needed to get normal pancake batter thickness. Pour into frying pan and flip once bubbles pop.

I love buttermilk pancakes so so much but buttermilk is almost a black market only good here. But this is about as close as it gets! If you are one of the lucky folk with access to the goods, just sub in buttermilk!
