1 bowl, 1 spoon, 4 Ingredients, SIMPLE!
- 1 cake mix (the 75 cent Woolies, Coles or Black & Gold brand ones are perfect!)
- 125 g butter (melted)
- 2 eggs
- 1½ cups additives (choc chips, smarties, marshmallows, the sky is the limit!)

Mix everything together in a bowl. Plop big tsps of mix onto baking sheets and bake at 200 deg cel until edges have started to brown. That's it! Done!!!
Today I used a chocolate cake mix and chocolate chips as my additive but the sky really is the limit! Previously I’ve used butter cake mixes with choc chips and marshmallows to make smores cookies, totally amazing!!! Word to the wise though… If you want to use marshmallows, lash out and spend a bit extra for the mini baking ones… The homebrand confectionery ones turn to a sugary mess in the oven!
The Ramblings
So don’t get me wrong I totally get that packet cakes have their place, however I rarely use them. With the notable exception of the greens caramel cake because it tastes just like the cheesecake shop caramel mudcake which is one of my favourite things in the whole wide world!!! I digress… My main objection to packet cakes is how expensive they are but I usually keep a couple of the homebrand 75 cent ones kicking around the back of the pantry. Mostly I use them for slice bases (just add a cup of coconut and 125g butter, taaaadaaa!!! instant slice base) or for my cheat’s caramel peach cake. Now though, these cheats 4 ingredient cookies are at the top of that list. I know normal cookies are quick enough to make too but holy dooly, these don’t even need the mix master! (not needing the mix master is notable as Mum’s lives in her pantry and it is darn heavy and awkward to get in and out and I am supremely lazy…)
