As a family, pot or individual pies, this is a favourite!
- 1 kg chicken thighs
- 2 tbsp olive oil
- 2 tsp minced garlic
- 1 tbsp all purpose seasoning
- 1 L chicken stock
- 1 cup white wine
- 2 bay leaves
- 3 cups finely chopped vegetables (most will work)
- ½ cup plain flour
- ¾ cup cream
- ½ cup shallots
Brown chicken and onion in oil, garlic and seasoning. Add in stock, wine and bay leaves and leave to fester away over a low heat until the chicken is ready to fall apart. Take out bay leaves and chicken. Add veggies and boil while you shred the chicken. Return chicken and keep cooking off excess liquid. Mix up cream and flour then stir in. Keep stirring until quite thick. Remove from heat and stir through shallots. Now it's ready for you to do whatever with.

I think I must be ill…. Today I have done 3 loads of washing, tidied the lounge, vacuumed, pulled weeds out of one garden bed, planted vegetable seeds, made dinner and washed up while I was doing it!!!! Very, very strange…..
