The ultimate brunch bake!
- ½ cup milk (luke warm)
- 1 tbsp sugar
- 2 tsp yeast
- 2 cups plain flour
- 3 eggs
- 60 g butter (soft)
- 1 cup frozen mixed berries
- 250 g cream cheese (soft)
- 2 tbsp maple syrup
- 2 tsp cinnamon
- ½ cup chocolate chips
Combine warm milk, sugar and yeast and set aside for a few minutes until frothy. In an electric mixer with a dough hook, combine yeast mix, flour and 1 egg. This should only just come together as a stiff ball. If needed add an extra tsp of warm water at a time. Add butter and beat the bajeesus out of until it reforms a ball (this may take a while, have faith!). Roll small chunks (close to tsp size) of dough into balls and chuck into a 20 x 30cm(ish) baking dish. Intersperse with frozen berries. Whisk together the cream cheese, cinnamon, maple syrup and remaining 2 eggs. Pour over, then sprinkle choc chips on top. Bake at 180 deg cel until the center is nice and firm.

Another lovely part about being down in Toowoomba is Sunday morning brunch with my big brother, Doug, his wife, Alex and my beautiful little niece, Lilah. We take it in turns as to which house we do it at, and quite often the pie maker gets a workout! Last night, though, I had a dream about this choc berry cheesecake brioche monkey bread and woke up all inspired. And if I do say so myself, it wasn’t too shabby!!!
