
Make the most of mandarins while they are in season with this chocolate mandarin slice!

Rich chocolately goodness offset with a tangy mandarin custard
- 125 g butter (melted)
- ½ cup sugar
- 1 cup plain flour
- 3 tbsp cocoa
- ¾ cup desiccated coconut
- 1 egg
- 1 cup blended mandarin (peel, remove seeds and pop segments into the blender)
- 1 cup water
- ½ cup sugar
- 2 tbsp custard powder
- 1 cup chocolate chips
Mix all base ingredients together and push into a slice tray. Pop into an oven at 180 deg until just pulling away from side and firm in the middle.
Combine mandarins, water, sugar and custard powder in a small saucepan. Stir over low heat until it forms a very thick custard. While still hot, pour over base. Sprinkle over choc chips and wait for a few minutes for them to melt. With a butter knife or a skewer, work the chocolate into swirls.
Chuck into the fridge to cool. Cut with a hot, wet, knife.
For a cheats version, pulpy orange juice could be substituted for the mandarins!
The Ramblings:
We are lucky to have a gorgeous little mandarin tree out the front of our house. When I was madly nesting with Elsie I got the whiz bang idea to water it like crazy. Apparently it likes it because we have a gazillion little mandarins weighing this poor little tree down.
When Mum is here, she and Hazie have a blast. One of their favourite activities is ‘picnics’ under the mandarin tree where they eat heaps of mandarins…. Somehow along the way, Hazie got confused and now calls mandarins ‘picnics’; so cute!
