Home stewed fruit in a fluffy, custard-y base. Perfect for smoko or dessert.

Ingredients
  • 6 pieces of stone fruit (today I had plums that needed using)
  • ½ cup sugar
  • 1 cup SR Flour
  • ½ cup coconut
  • 1 tin condensed milk
  • 1 egg
  • 125 g butter (melted)
Instructions
  1. Remove stones and chop fruit roughly. Combine in a small saucepan with ¼ cup sugar and a tbsp water over medium heat. Let bubble away while you make the base. Mix remaining sugar and everything else together and spread into a slice tin (or if you are doing a dessert and want it a bit higher, try a cake tin). Once the fruit has lost a fair bit of its moisture (you do still want a reasonable amount in it), pour it over the base and as you spread it don't be afraid to mix it just a fraction. Bake at 180 deg cel until a skewer comes out clean. Time frame on this will vary hugely depending on the tin you use.

For this cobbler slice, any stone fruit will work beautifully. Don’t be afraid to get creative though, be inspired by whatever needs using in your fridge. Ps, I think apple or pineapple cobbler slice would be stunning too!

The Ramblings:

And I’m finally back!!!!!!! So sorry for the hiatus, however, its been for good reason… I’m 13 weeks pregnant!!!! It’s a very happy surprise, however, being a cook who vomits at the smell of pretty well any food cooking is somewhat problematic…. So life has steadied up a little with me finishing up cooking and going back to just working and teaching dance. Much more manageable, and a lot more time for my head to be in the loo. Anywho, discussing my spew probably isn’t overly appetite inducing, so onward and upward!

Now I can spill the beans I have to tell you a story about my gorgeous Miss Maggie….

I know dogs have an amazing sense of smell and a third eye that ‘just knows’ so much about their humans, but if someone had told me Maggs the wilderbeast would sniff out her new friend at 5 weeks, I would have called BS. But she did! She does this thing that I call her ‘snuffluffagus the truffle pig’ impersonation where she turns her nose up funny and goes tracking anything from sheep poo to old bones. Anyway, we were having cuddles out on the verandah just after I had peed on the fateful stick and she Snuffluffagus-ed me!

She went all over, the ‘dug’ up my shirt and after sniffing my belly button for a while, layed her head on my tum and started licking it!!! I sh*t you not!!!! And ever since, she has been sooooo gentle with me and super dooper protective. If there was ever proof that humans just don’t deserve how beautiful dogs are, for me, this is it!
