Home stewed fruit in a fluffy, custard-y base. Perfect for smoko or dessert.
Remove stones and chop fruit roughly. Combine in a small saucepan with ¼ cup sugar and a tbsp water over medium heat. Let bubble away while you make the base. Mix remaining sugar and everything else together and spread into a slice tin (or if you are doing a dessert and want it a bit higher, try a cake tin). Once the fruit has lost a fair bit of its moisture (you do still want a reasonable amount in it), pour it over the base and as you spread it don't be afraid to mix it just a fraction. Bake at 180 deg cel until a skewer comes out clean. Time frame on this will vary hugely depending on the tin you use.
