Ingredients:
- 2 apples peeled chopped finely
- 1 cup chopped dates
- 1 cup sultanas
- 1 big tbsp instant coffee
- 1 big tspn cinnamon
- 1/4 cup water
- 125g butter
- 3/4 cup brown sugar
- 2 eggs
- 1 tsp vanilla
- 1 1/2 cups SR flour
- 1 tsp baking powder
Method:
In a saucepan boil up fruits, coffee, cinnamon and water until dates have softened and all of the moisture has been absorbed. Set aside to cool.
Cream butter and sugar really thoroughly. Add eggs and vanilla then flour and baking powder. Fold through coffee mix. Pour into a loaf tin and bake at 180 deg cel. Come hell or high water, do not open the oven door for the first 30-40min or it will make a grand canyon in the middle (if it does, dont worry, icing hides all!).
Once cooled top with coffee icing.

The beautiful bloke who lives out the back got home from holidays last week and I finally caught up with him yesterday to restock his stash of freezer meals and send his magic tin home with him. After my love of the zucchini and lemon loaf the other day I’ve been wanting to play with making other sweet loaves, definitely a success!!!!
