Cowboy Cookies

Ooey, gooey, yummy, chewy, better than wombat stew!

Servings: 20 cookies
Ingredients
  • 125 g butter (soft)
  • 2/3 cup brown sugar
  • 3 tbsp peanut butter (I prefer crunchy)
  • 1 egg
  • 1 tsp vanilla
  • 1 cup plain flour
  • 1 cup rolled oats
  • 1/2 cup cashews (roughly chopped)
  • 1/2 cup sultanas
  • 1/2 cup chocolate chips
Instructions
  1. Cream butter and suggar. Add peanut butter, egg and vanilla then chuck in oats and flour. Once well beaten, add in everything else. Drop dessert spoons of mixture onto trays (roll if you want to look proper flash) and bake at 180 until bottoms just start to brown. Let cool on trays so they firm up nicely.

The Ramblings:

With my new job fast approaching (3rd of September!!!!!!) freezer stocking is well under way but you can never have too many biccies up your sleeve. I love these because they are a little bit of everything and with the oats, super filling!

Miss Maggie is a constant source of entertainment and it’s hard to remember life without the precious little monster. She has two settings, rambunctious wilderbeast or let me sleep on you, zero in between. Her inter-species social graces are a little lacking yet and much to the cat and the lamb’s horror, she is showing all the signs of a promising pig dog (which, no matter what Matt says, she WILL NOT be!!!). She is a good little ear chomper and an encouraging “sket-old-o-it” results in a big pounce, chomp and death shake/roll of the poor rope and ball toy….. On the plus side, she has learnt chewing shoes results in a smacked bottom so now she just takes them on the lawn and just sleeps on them…. Baby steps! No teeth marks is progress right???
