Date Loaf
Fast, simple and packed with delicious goodness
Servings: 10 Slices
Ingredients
- 1 cup dates (chopped)
- 60 g butter
- 4 weetbix
- 1 cup brown sugar
- 1 cup boiling water
- 1 tsp bicarb soda
- 2 eggs
- 1 cup SR Flour
Instructions

Cover dates, butter, weetbix, sugar and bicarb in boiling water and let sit for 10 minutes. Beat through eggs then flour. Pour into a loaf tin and bake at 180 deg cel until a skewer comes out clean.
The Ramblings:
In my quest to stock the freezer for impending two job balancing act, yesterday I had quite the baking day. I can’t take credit for this recipe though, it isn’t a Claire creation. It came from an old school cook book and mum has been making it for years, tastes like my childhood! I have made a few little tweaks, but not enough to claim it. Like Wendy’s Slice, you can’t top perfection!
