Fruity Sweet Tea Loaf

A light, moist cake perfect for summer smokos.

Ingredients
  • 2 bags fruity flavored herbal tea
  • 1/3 cup sugar
  • 60 g butter (soft)
  • 2 duck eggs (or 3 chook eggs)
  • 2 1/3 cups SR flour
  • 1 cup finely chopped fruit/berries
Instructions
  1. Open tea bags and pour leaves into 1 cup of boiling water with boiling water and allow to steep. Chuck everything else except fruit in and beat while gradually adding tea. Gently mix through fruit and bake at 180 deg cel until a skewer comes out clean.

Recipe Notes

I used strawberries today but depending on tea flavor you could use most other fruits. If you are using a ‘warmer’ flavour tea, like cinnamon etc, finely chopped apple would be delicious.

The Ramblings:

I’ve been super slack on here this last week again sorry, but it’s been all systems go in my little world. First week of getting back into dance has been so good for the soul! Although I have rediscovered many many muscles that apparently have been in hibernation and are reacting with the same disdain and vengence I do when woken up… I’ve also had my Dad and Step-Mum out staying for a few days, and Mum comes out on Saturday, so excited!

Also found out that we will be here for Christmas again this year, so have started to think about ways to make it special despite not being with family… Coming up empty atm, would love ideas! It’s a strange life stage, where I guess this is where we create our own traditions as we are building our lives, but for me, finding the ‘new’ magic isn’t as simple as it sounds.
