A light, moist cake perfect for summer smokos.
Open tea bags and pour leaves into 1 cup of boiling water with boiling water and allow to steep. Chuck everything else except fruit in and beat while gradually adding tea. Gently mix through fruit and bake at 180 deg cel until a skewer comes out clean.
I used strawberries today but depending on tea flavor you could use most other fruits. If you are using a 'warmer' flavour tea, like cinnamon etc, finely chopped apple would be delicious.
