Incredibly light and moist but not too sweet
- ⅔ cup milk
- 2 tbsp white vinegar
- 125 g butter (soft)
- ¾ cup brown sugar
- ½ cup ginger marmalade
- 1 tbsp ground ginger
- 3 eggs
- 2 cup SR flour
Combine vinegar and milk and let sit for 5 minutes. Add in everything else and beat the bajeesus out of it for a few minutes until pale. Pop in cake tin. Sit cake tin inside a pie/quiche dish and fill with water to about ¾ up the side of the cake tin. Bake at 160 deg cel until a skewer comes out clean.
Combining the milk and vinegar is a make-shift buttermilk. It will separate/curdle, but fret not, it is meant to!
Here is the ginger marmalade I use for this cake. Ps, yes I know this isn’t the best photo, but I was too excited and it was just out of the oven, will ice it later!
The Ramblings:
Sorry I have been AWOL this week. My town work Christmas party was last Friday and it had me all cooked out! The gingerbread cookies I made before that though have got me on a bit of a ginger crusade, hence today’s creation, ginger cake.
Last week was the last week of dance for the term, HOORAY!!!! Because we had only been going for one term we didn’t have a concert. To show the parents what we had been doing though, we invited them to come watch our dance in the last 10 minutes of classes. I was so so proud of my little cherubs, I am shocked at how quickly they have picked everything up! Even more importantly than how clever they are, all of those kids constantly shock me at what awesome humans they are. Honestly the kindest, funniest little souls!
So with dance done for the year, I now have 2 luxurious days at home a week again!!!! Luxurious may be a little bit of an over estimation… Matt has friends arriving Saturday to stay for a week-ish, so my luxury is cleaning the house, top to bottom… Decadent right?!….. Yesterday afternoon I got a head of steam and rearranged and cleaned our room. It’s a reasonably small room, so a jiggle around has given us so much more space, and hopefully this time it may stay a little tidier……..
Summer has really hit here the last few days which is awesome because it means it is time to blow up the pool!!! Matt the super star is going to move the trailer out of the car shed and put it in there which shall save this little albino needing to take out shares in banana boat….

I am giving this 5 stars, it is still in the oven, but the batter was delicious. So I can’t wait for the finished result. What do you ice it with? I was just going to sprinkle icing sugar over it.
