A lovely ginger flavour that isn't overpowering
- 125 g butter (soft)
- ½ cup brown sugar
- 2 tbsp ginger marmalade
- 2 tbsp golden syrup
- 1 egg
- ½ cup cornflour
- 3½ cups plain flour
- 1 tsp mixed spice
- 3 tsp ground ginger

Cream butter and sugar. Add everything else and beat well. Roll out (between 2 silicone bake sheets is easiest!). Cut shapes and bake at 180 deg cel until tops just begin to golden.
The Ramblings:
1st of December!!! It’s finally acceptable to begin the Christmas cooking! This year I am kicking off with gingerbread biscuits and some spritz cookies that I will pop up in the next few days too. Years ago, when I used to look after my little cousins in school holidays, the kiddo’s and I used to love making gingerbread creations. We used to send decorated cookies to work with Aunty Em but one year we really outdid ourselves and made the mother of all gingerbread houses. There were enough lollies on it that I think it could have caused diabetes with just one look!
Last year, in mid December, I was adamant that I wanted a Christmas tree and Matt didn’t, so we compromised…. and bought a Christmas tree… This year the compromise continues, the tree is already up and ready for decorating tonight! Can’t wait! I may really push my luck and see if I can convince Matt that we also need to put the lights up too! Fingers crossed!
Yesterday brought an interesting twist… In the new year we will most likely be welcoming some new, canine additions to the family! We have a big enclosure for the working dogs that has 4 kennels inside that are well up off the ground. Matt swaps the dogs over so that the boys are always locked up when Daisy is out… In theory, fool proof contraception….
Overnight, however, one of the boards at the back of the male working dogs kennels broke and fell down, creating a ramp. So, Duke (Matt’s youngest Kelpie), thanked his lucky stars and had the night of his life with Miss Daisy… Amazingly bad timing as Daisy in even on heat at the moment… Despite the different context, unplanned doesn’t mean unwanted, is definitely applicable. I can’t wait to have cute little, kelpie puppies! We will just have to be careful of Maggs… I think she may smoosh them trying to love them…
