Grandma's Gingernut Biscuits
Grandma’s Gingernut Biscuits
Ingredients
  • 2 cups self raising flour
  • 1 tsp cinnamon
  • 2 tsp ground ginger
  • 1 tsp bicarb soda
  • 1 cup brown sugar
  • 125 g butter or margarine (melted)
  • 1 tbsp golden syrup
  • 1 egg (lightly beaten)
Instructions
  1. Sift flour, spices and soda into a bowl. Stir in sugar, butter, syrup and egg. Mix to a firm dough. Roll big tsps of dough into discs and mark with a fork on a biscuit tray. Bake at 200 deg cel until beautifully golden with browned edges. If you like crunchier ones, cook until a darker brown.

The Ramblings:

Yesterday my Aunty gave me the best present in the entire world; 2 crochet blankets Grandma made and her recipe book! Safe to say I cried a LOT (in fairness hormones probably didn’t help…)! In an effort not to begin the crying again this morning I shan’t go into how much this means, but suffice to say no words I could write would do it justice anyway. So I’ve decided that while I’m still working away to get my Dinners book out by November, my new goal is in the next year to cook my way through Grandma’s book. After perusing Mum’s pantry, I decided to kick this off with Grandma’s Gingernut Biscuits this morning.

As I cook my way through, I’m going to turn them into a book of it’s own; Grandma’s Collection. I’ll scan in the original pages but also have a translated version. Grandma’s writing is beautiful but the book is very well loved so a bit tricky to read in some places. I’ll also do the conversions (quite a lot of them use pints, ounces, etc) and add my notes and memories. I hope that this will be something that will be special to not only our family but will share the love that Grandma’s food always showed. Ps, I would be so uncomfortable to ‘profit’ off this so will be on the lookout for a worthy cause that Grandma would have loved. If you have any suggestions feel free to send them my way! Grandma was particularly talented in the art and craft department so I’m tentatively thinking perhaps something that incorporates that? Not sure! Will put plenty of time into finding something that is just right!
