Ingredients:
- 1 onion
- 1 tsp garlic
- 1 tbsp butter
- 250g ham
- 1 cup milk
- 1 tbsp plain flour
- 1/2 head broccoli (florets chopped super fine, could use food processor)
- 8 slices cheese
- 4 sheets puff pastry
- 1 egg (beaten)
Method:
Fry off onion and garlic in butter until onion is soft. Add ham and fry for another minute or so. Whisk together milk and flour then mix into ham mix, stirring constantly until quite thick. Remove from heat and stir through broccoli. Cut each sheet of puff pastry in half and place a cheese slice and a good dollop of ham mix at one end. Fold pastry over the top and seal down with fork. Brush with egg mix and bake at 180 until golden and puffy.

With a new jackaroo arriving tomorrow I’m stocking up the freezer with packable lunches that aren’t just sambos. Fingers crossed he’s a puff pastry kid!
I typed up how I made these today but honestly, the concept of meat and veg with white sauce in puff pastry is darn straight forward and completely customisable. Get creative with whatever is in your fridge and I’m sure it will be scrumptious!
