Yummy and guilt free!
- 1 cup dried dates
- 4 weetbix
- 2 tbsp peanut butter
- 1 tbsp honey
- ½ cup almond meal (if you don't have it just use more oats or an extra weetbix)
- ½ cup rolled oats
- 2 tsp cinnamon
- 2 tsp vanilla
- 2 tsp instant coffee
- ⅓ cup melted coconut oil (or could use butter if needed)
Soak dates in boiling water for 10 min then drain. Bung everything in the food processor and give it a good whiz. It should all be coming together but if you are concerned its a bit dry add a teaspoon of water at a time. Push into a small square cake tin and chill. To pretty it up, I drizzle over a tiny bit of melted dark chocolate and sprinkle with chia seeds.
The Ramblings:
I am the first to admit that I have zero self control with food. Instead of beating myself up over this though, I just make sure that I have delicious better choices on hand while I’m surrounded by decadent baking all the time. I’m not allowed to be useful in the paddock (grinds my gears so much but that’s a rant for another day), so trying to make my jeans fit is a very conscious effort and I can’t get away with eating naughtily. As much as it sucks, if I’m going to keep fitting through the door, I can’t eat all the naughties I make for the boys so I’m finding ways to make being ‘good’ still taste amazing and not take much effort.
