Honey Jumbles

Honey Jumbles

Large batch biscuits that can be easily halved if you aren't feeding an army.

Ingredients
  • 125 g butter
  • 1 cup brown sugar
  • 3/4 cup honey
  • 3/4 cup golden syrup
  • 2 eggs
  • 4 tsp ground ginger
  • 2 tsp cinnamon
  • 2 tsp mixed spice
  • 6 1/2 cups flour
  • 4 tsp baking powder
Icing
  • 1 egg white
  • 1 1/2 cups icing sugar
  • 2 tsp flour
  • lemon juice
Instructions
  1. Bung the butter, sugar, honey and syrup in a saucepan and mix over low heat until all nice and dissolved. Let cool for 10 min. Mix all the dry ingredients together (I'm lazy and do it in the mixer on low). Gradually pour in the butter mix, add eggs and beat for a few minutes. Turn out onto a floured bench and knead until it's not so sticky (don't keep adding until its not at all sticky or you'll end up with rocks). Glad wrap and stick in the freezer for 15 min. Shape as desired then bake at 180 deg cel until bottoms are brown. Ice when cool.

Icing
  1. Lightly beat the whites then mix in the sugar and flour. Add lemon juice to create desired consistency.

The Ramblings:

So I’m a little late but International Rural Women’s day was earlier this week and it’s a day that always gets me thinking, but even more so this year. Throughout my life so far I have been lucky to have been raised by, to know and love many incredible rural women. I believe they are a ‘breed’ that unless known cannot be comprehended. The juxtaposing combination of extreme competence, strength, hardness, compassion and gentleness has to be seen to be believed. Always the first to offer support and be the comforter, rarely the comforted, let’s remember to check in with our rural women a little more often. They may be super-human but even heroes have the right to bleed.
