Ingredients:
- 125g butter (soft)
- 1/2 cup brown sugar
- 1 tin condensed milk
- zest and juice of 1 big lemon
- 2 tbsp golden syrup
- 2 good tsp ground ginger
- 1 egg
- 4 weetbix
- 1 cup rolled oats
- 1/2 cup SR flour (or plain + 1 tsp baking powder)
Method:
Cream butter and sugar. Add condensed milk, lemon, golden syrup and ginger and beat until beautifully smooth. While still beating slowly add egg then everything else. Pour into tray (could use a slice tray but I use a large square cake tin so it’s a bit deeper) and bake until it pulls away from sides.
To make icing, put 60ish g butter, 1 tbsp golden syrup, 2 good tsp ginger and 2 tbsp boiling water in a bowl. Add enough icing sugar to make a stiff buttercream. Smear on cool slice.
Ramblings:
I have been seeing quite a few ginger slice recipes lately and have been wanting to give one a go. I’m not a big fan of the dry crunchy type slice so I have made mine really moist and a touch ‘cakey’. I’m still on my crusade to use the mountain of lemon Lisha brought me last weekend and I am loving the lemon ginger combo.
