Nanna’s Pumpkin Scones
Quick, easy and darn delicious!
Ingredients
- 2 oz butter (half-ish of 125g)
- ½ cup sugar
- 1 egg
- 1 cup milk
- 1 cup mashed pumpkin (cold and well drained)
- 2 cups plain flour
- 2 tsp cream of tartar
- 1 tsp bicarb soda (3 tsp of baking powder works if you don't have the separates)
Instructions

Combine butter and sugar. Add egg, pumpkin and mix well. Add everything else. Roll out onto floured bench and cut out. Bake in hot oven until brown on the bottom.
The Ramblings:
My mum, despite being a hater of it herself, was the weetbix gestapo when we were little. So the days when she had pumpkin scones fresh out of the oven and we were allowed to have them for breakfast were the ducks nuts!
PS Really yummy with left over jam from donuts!
